Shredded Breakfast Casserole
Ingredients
  • 3 Cups Shredded potatoes
  • 1 Cup of choice cheese
  • ½ Cup of breakfast meat
  • ½ cup peppers (green, red, yellow)
  • 4 egg whites
  • 1 tsp of garlic salt
  • 1 tsp of Italian seasoning


Directions

  1. In a small bowl, combine the shredded potatoes, cheese, meat, peppers, garlic salt and seasoning in a bowl.
  2. Mix well with hands.
  3. In a small bowl beat egg whites and pour into medium pie plate.
  4. Place potato mixture in same pie plate and bake at 425 degrees (218 degrees C) for 30-35 minutes or until the potatoes are crispy and cheese is melted. Let cool 10 minutes and serve.
  5. The beauty of this recipe, like others is that you can put basically anything you want in it. If you are more into a vegetarian kick the you can add vegetables of choice. You can also make it larger for larger families by doubling the recipe. This is a great family dish to serve on a Sunday morning or just have made for a quick morning. Also, I have seen people take the dish and put it in a burrito to make breakfast burritos.
