Overnight Low Fat Oatmeal

Ingredients:

  • 3 Washington Apples (cored and diced) makes about three cups

  • 2 Cups of Steel Cut Oats (you do not want to use “quick” oats)

  • 2 Cups of Almond Milk

  • 1 Cup of Cold Water

  • 2 TBSP of Cinnamon

  • 1 TBSP of Sugar (or sugar substitute)


  1. First, use nonstick spray to coat the inside of a slow cooker/crockpot (I use a standard 4 quart) If you do not you might as well use a hammer and chisel to get it out in the morning. This greatly reduces the likelihood that things will stick 

  2. Add Apples, Almond Milk, Water, Apples, Cinnamon, and Sugar to the crockpot. Stir ingredients together until well combined. Then, slowly add the oats and stir until the mixture is well combined. Set your crockpot on LOW. Cook for 5-6 hours, you can cook it longer but I have done it for no longer than 8 hours.

  3. This recipe can be doubled for a larger crowd, the important thing is to make sure not to overcook the oats. Apples should be sweet and soft. This can be frozen if need be for one person this could be easily parted into 4-5 servings.
