Buttermilk cake
Ingredients:
4 eggs
4 cups of flour
3 cups of sugar
2 cups of buttermilk
14 gram vanilla sugar
32 gram baking powder
100 gram butter
100 gram rasped coconut (here in the states we'd call this shredded)
Process:
Preheat oven to 250C (gas oven add 5 degrees)
Sift together the flour, baking powder, vanilla sugar and the sugar in a mixing bowl.
Add the buttermilk and eggs while stirring the mixture.
Pour the mixture in a square baking pan (buttered and floured)
Bake in a 250 °C (gas over 5) for 45 minutes.
While the cake is baking, melt the butter and set aside keeping warm.
Remove the cake from the oven, pour the melted butter over the baked cake and sprinkle the
rasped Coconut over the cake.
Put it back in the oven for a couple of minutes until the coconut is toasted.
Remove, cool and eat - Enjoy!
