Due to the total lack of interest and participation by the membership, the Intergalactic Cafe will be closing for renovations until February.
However, just in case there is anyone out there who does like to bake and eat Holiday Cookies, here is my master's favorite recipe:
White Chocolate Chip/Coconut Christmas Cookies
2 sticks butter (1/2 lb.)
1 1/2 cup sugar
2 eggs
2 tsp. vanilla
2 cups + 4 tsp. flour
1 tsp baking soda
2 7oz. packages of shredded coconut
1 12oz package Nestle's White Chocolate Chips
Preheat oven to 350 degrees.
Cream together in large mixing bowl butter and sugar, beat till light and fluffy.
Beat in eggs and vanilla.
In a separate bowl, mix flour and baking soda, then slowly add to the sugar/butter mixture, beating on medium speed to mix well.
Fold in coconut and white chocolate chips (I usually do this by hand with a big wooden spoon cause the dough is heavy and stiff)
Drop in small teaspoon sized mounds onto cookie sheet, and bake in 350 degree oven for 23-25 minutes, till nicely browned.
These are especially good for people who like cookies but don't like regular chocolate - Heaven Forbid!
