Breaded Ham and Cheese stuffed Chicken

·         1 Cup  of finely crushed whole wheat crackers

·         ½ teaspoon of salt

·         ½ teaspoon of pepper

·         ¼ pound of sliced ham

·         1 cup shredded cheese of choice (Mexican blend is best)

·         ¼ teaspoon basil

·         ¼ teaspoon oregano

·         4 boneless skinless chicken breasts (thoroughly thawed)

 

1.    In a measuring cup, crush whole wheat crackers very finely. Add salt, pepper, basil, and oregano and mix well then set aside.  

2.    Taking the chicken breast, butterfly cut through the middle of each breast, ensuring not to cut all the way through the other side of the breast. Place 2-3 slices of ham and about a quarter cup of cheese into the middle and carefully fold over.

3.    Using toothpicks secure the chicken breast back together and then roll into cracker mixture until well covered. Place on a baking sheet greased with cooking spray. Repeat process for the other chicken breasts. Place in oven at 375 degrees for 25-30 minutes
